Ingredients

  • 3 cups All-purpose flour
  • 3 cups Granulated sugar
  • 2 teaspoons Baking soda
  • 1.5 teaspoons Salt
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 0.5 teaspoon Cloves
  • 1 cup Vegetable oil
  • 1 15-ounce can Pumpkin puree (canned or fresh)
  • 4 Eggs
  • 0.5 cup Water
  • 2 teaspoons Vanilla extract
  • 1 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9x5-inch loaf pans or line them with parchment paper.

Step 2

In a large bowl, sift together the all-purpose flour, granulated sugar, baking soda, salt, cinnamon, nutmeg, and cloves. Mix well to combine the dry ingredients evenly.

Step 3

In a separate medium-sized bowl, whisk together the vegetable oil, pumpkin puree, eggs, water, and vanilla extract until the mixture is smooth and well combined.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix—the batter should be smooth but still a little thick.

Step 5

If using chopped walnuts, fold them into the batter at this stage.

Step 6

Divide the batter evenly between the two prepared loaf pans, smoothing the tops with a spatula.

Step 7

Bake in the preheated oven for 55 to 65 minutes, or until a toothpick inserted into the center of the loaves comes out clean or with just a few moist crumbs.

Step 8

Remove the pans from the oven and let the bread cool in the pans for 10 minutes. Then carefully transfer the loaves onto a wire rack to cool completely.

Step 9

Slice and serve the pumpkin bread at room temperature. Enjoy plain or with a spread of butter or cream cheese!
