Ingredients

  • 2 pounds beef stew meat
  • 2 tablespoons olive oil
  • 1 large, diced yellow onion
  • 3 minced garlic cloves
  • 4 medium, peeled and sliced carrots
  • 3 sliced celery stalks
  • 4 large, peeled and cubed russet potatoes
  • 6 cups beef broth
  • 1 14.5-ounce can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons, chopped (optional, for garnish) fresh parsley

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with salt and pepper, then add to the pot. Brown the meat on all sides, about 5 minutes. Remove the beef and set it aside.

Step 3

In the same pot, add the diced onion and sauté for 4-5 minutes until softened. Add the minced garlic and cook for another 1 minute.

Step 4

Stir in the carrots, celery, and potatoes. Cook for 2-3 minutes to lightly coat the vegetables in the oil and juices from the meat.

Step 5

Return the beef to the pot, then pour in the beef broth. Add the can of diced tomatoes (including juices), tomato paste, Worcestershire sauce, bay leaf, thyme, paprika, salt, and black pepper. Stir well to combine.

Step 6

Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the flavors have melded together.

Step 7

About 10 minutes before the stew is done, stir in the frozen peas. Cook until heated through.

Step 8

Remove the bay leaf before serving. Taste and adjust seasoning with additional salt and pepper if needed.

Step 9

Ladle the stew into bowls and garnish with fresh parsley, if desired. Serve hot with crusty bread or crackers.
