Ingredients

  • 3 cups All-purpose flour
  • 1.25 cups Water
  • 1 pound Pork (ground)
  • 2 cups Cabbage
  • 0.5 cup Green onions (chopped)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 0.25 cup Water (for steaming)

Directions

Step 1

In a large mixing bowl, gradually combine the flour and 1.25 cups of water to form a dough. Knead the dough for about 8-10 minutes until it is smooth and elastic. Cover with a damp towel and allow to rest for 30 minutes.

Step 2

While the dough rests, prepare the filling by finely shredding the cabbage and chopping the green onions.

Step 3

In a separate bowl, combine the ground pork, cabbage, green onions, soy sauce, sesame oil, minced garlic, grated ginger, salt, and black pepper. Mix thoroughly until well combined.

Step 4

Divide the dough into two portions and roll each portion into a log shape about 1 inch in diameter. Cut into 1-inch pieces and roll each piece into a small ball.

Step 5

Using a rolling pin, flatten each ball into a thin, round wrapper about 3 inches in diameter.

Step 6

Place a heaping teaspoon of filling in the center of each wrapper. Fold the wrapper in half and pinch the edges together to seal, pleating as you go for a traditional look.

Step 7

Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Arrange the dumplings in the skillet in a single layer, making sure they don’t touch.

Step 8

Cook the dumplings for 2-3 minutes until the bottoms are golden brown.

Step 9

Add 1/4 cup of water to the skillet and immediately cover with a lid. Let the dumplings steam for about 5 minutes, or until the water has evaporated.

Step 10

Remove the lid and cook for another 1-2 minutes to crisp up the bottoms again.

Step 11

Serve warm with your favorite dipping sauce, such as soy sauce mixed with a splash of rice vinegar and a dash of chili oil.
