Ingredients

  • 1 store-bought or homemade (9-inch, unbaked) Pie crust
  • 3 large Eggs
  • 1 cup Light corn syrup
  • 0.75 cup Granulated sugar
  • 0.25 cup Unsalted butter
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 1.25 cup (halved and lightly toasted) Pecans

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Prepare the pie crust by placing it into a 9-inch pie dish. Trim and crimp the edges if necessary, then put it in the refrigerator to keep it cold while you prepare the filling.

Step 3

In a large mixing bowl, crack and whisk the eggs until lightly beaten.

Step 4

To the eggs, add the light corn syrup, granulated sugar, melted unsalted butter, vanilla extract, and salt. Whisk together until the mixture is smooth and well combined.

Step 5

Gently stir in the toasted pecan halves until evenly distributed in the mixture.

Step 6

Remove your pie crust from the refrigerator. Pour the prepared filling into the unbaked pie crust, spreading the pecans out evenly across the top.

Step 7

Carefully place the pie on the center rack of your preheated oven. Bake for 55-60 minutes, or until the filling is set and starts to puff slightly in the center. The edges of the crust should also be golden brown.

Step 8

Remove the pie from the oven and let it cool completely on a wire rack. The filling will set further as it cools.

Step 9

Once the pie has cooled, slice and serve as-is, or with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
