Ingredients

  • 2 cups pitted dates
  • 1 cup water
  • 0.25 cup granulated sugar
  • 2 cups rolled oats
  • 1.5 cups all-purpose flour
  • 1 cup brown sugar, packed
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 1 cup unsalted butter, cold and cubed

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

Step 2

In a medium saucepan, combine the pitted dates and water. Cook over medium heat, stirring occasionally, until the dates break down and form a thick paste, about 10 minutes. Stir in the granulated sugar and set aside to cool slightly.

Step 3

In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Mix well until evenly distributed.

Step 4

Add the cubed unsalted butter to the dry ingredient mixture. Using a pastry cutter or your fingers, work the butter into the mixture until it resembles coarse crumbs.

Step 5

Press half of the oat mixture firmly into the bottom of the prepared baking dish to form the base.

Step 6

Spread the cooled date filling evenly over the base layer.

Step 7

Sprinkle the remaining oat mixture over the date filling and press down gently to create an even top layer.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.

Step 9

Remove from the oven and allow the date squares to cool completely in the pan before cutting into squares.

Step 10

Serve and enjoy! Store any leftovers in an airtight container at room temperature for up to 3 days.
