Ingredients

  • 15 oz (1 can) whole kernel corn (drained)
  • 15 oz (1 can) cream-style corn
  • 2 large eggs
  • 2 tbsp granulated sugar
  • 4 tbsp unsalted butter (melted)
  • 1 cup milk
  • 3 tbsp yellow cornmeal
  • 2 tbsp all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 2-quart baking dish.

Step 2

In a large mixing bowl, combine the drained whole kernel corn and the cream-style corn. Stir until well mixed.

Step 3

In a separate bowl, whisk the eggs until lightly beaten. Add the granulated sugar, melted butter, and milk to the eggs, and whisk until combined.

Step 4

Gradually add the wet egg mixture to the corn mixture, stirring gently until evenly combined.

Step 5

In another bowl, mix together the dry ingredients: yellow cornmeal, all-purpose flour, baking powder, and salt.

Step 6

Slowly incorporate the dry ingredients into the wet mixture, stirring until the batter is smooth and thoroughly combined.

Step 7

Pour the batter into the prepared baking dish, spreading it out evenly.

Step 8

Bake in the preheated oven for 50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out almost clean (a slightly moist crumb is okay).

Step 9

Remove the corn pudding from the oven and let it rest for 5–10 minutes before serving.

Step 10

Serve warm as a delicious side dish, and enjoy!
