Ingredients

  • 1 medium head (about 2 lbs) Green cabbage
  • 2 medium Carrots
  • 0.25 medium Red onion
  • 1 cup Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 1.5 tablespoons Granulated sugar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Celery seed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Remove any wilted outer leaves from the cabbage, then slice it in half and remove the core. Shred the cabbage finely using a knife or a food processor, and place it in a large mixing bowl.

Step 2

Peel the carrots and grate them using a box grater or a food processor. Add them to the bowl with the cabbage.

Step 3

Finely dice the red onion or use a mandoline to slice it thinly. Add the onion to the bowl.

Step 4

In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, celery seed, salt, and black pepper until smooth and well combined.

Step 5

Pour the dressing over the cabbage mixture. Using tongs or a large spoon, toss everything together until the vegetables are evenly coated with the dressing.

Step 6

Cover the bowl and refrigerate the coleslaw for at least 1 hour to let the flavors meld. Stir again before serving.

Step 7

Serve chilled as a side dish to your favorite barbecue dishes, sandwiches, or burgers. Enjoy!
