Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 3 cups Broccoli florets
  • 1 cup White rice
  • 2 cups Chicken broth
  • 1 can (10.5 oz) Condensed cream of chicken soup
  • 0.5 cup Sour cream
  • 1.5 cups Shredded cheddar cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Butter
  • 1 cup Crushed Ritz crackers

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Cook the white rice according to the package instructions using the chicken broth as the liquid for added flavor. Once cooked, set aside.

Step 3

In a medium skillet over medium heat, cook the chicken breasts until golden brown on the outside and fully cooked on the inside, about 5-7 minutes per side. Remove from heat, shred or dice the chicken into bite-sized pieces, and set aside.

Step 4

Bring a pot of water to a boil. Add the broccoli florets and blanch them for 2-3 minutes, just until bright green and slightly tender. Drain and set aside.

Step 5

In a large mixing bowl, combine the cooked rice, shredded chicken, broccoli, cream of chicken soup, sour cream, 1 cup of shredded cheddar cheese, salt, black pepper, and garlic powder. Mix until evenly combined.

Step 6

Transfer the mixture into the prepared baking dish and spread it out evenly.

Step 7

In a small bowl, melt the butter and mix it with the crushed Ritz crackers. Sprinkle the buttered cracker crumbs evenly over the casserole. Top with the remaining 0.5 cup of shredded cheddar cheese.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.

Step 9

Remove the casserole from the oven and let it cool for 5 minutes before serving. Enjoy this warm, cheesy, and hearty dish with your loved ones!
