Ingredients

  • 1 pound ground beef
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 medium potatoes, peeled and diced
  • 14 ounce can fire-roasted diced tomatoes
  • 2 tablespoons tomato paste
  • 6 cups beef broth
  • 1 cup frozen green beans
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 teaspoons worcestershire sauce

Directions

Step 1

In a large heavy-bottomed pot or Dutch oven, heat olive oil over medium heat.

Step 2

Add the ground beef and cook, breaking it up with a wooden spoon, until browned and fully cooked. Drain any excess fat and set the beef aside on a plate.

Step 3

In the same pot, add the diced onion, minced garlic, carrots, and celery. Sauté for 5-6 minutes until the vegetables are softened and the onion is translucent.

Step 4

Return the cooked ground beef to the pot. Stir in the Italian seasoning, paprika, salt, and black pepper.

Step 5

Add the diced potatoes, fire-roasted diced tomatoes (with their liquid), tomato paste, beef broth, and Worcestershire sauce. Stir everything to combine.

Step 6

Bring the soup to a boil over high heat, then reduce the heat to low and let it simmer for 25-30 minutes, or until the potatoes are tender.

Step 7

Add the frozen green beans and cook for an additional 5 minutes.

Step 8

Taste and adjust seasoning if necessary.

Step 9

Serve hot with crusty bread or crackers for an extra comforting meal.
