Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Beer (lager or pale ale recommended)
  • 0.25 cups Butter, melted
  • 0.5 cups Cheddar cheese, shredded (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line with paper muffin liners.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Step 3

Create a well in the center of the dry ingredients and pour in the beer. Stir gently until just combined and no large pockets of flour remain. Be careful not to overmix, as this can make the muffins dense.

Step 4

If you are adding shredded cheddar cheese, fold it into the batter at this stage.

Step 5

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 6

Drizzle the melted butter over the top of the batter in each muffin cup. This will create a golden, slightly crispy top as the muffins bake.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely or enjoy warm.
