Ingredients

  • 12 oz egg noodles
  • 2 cans (5 oz each) canned tuna, drained
  • 2 cans (10.5 oz each) cream of mushroom soup
  • 1 cup milk
  • 1 cup frozen peas
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium onion, finely diced
  • 2 tbsp butter
  • 1 cup panko breadcrumbs
  • 0.25 cup parmesan cheese, grated
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.

Step 2

Bring a large pot of salted water to a boil. Cook the egg noodles according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, melt the butter over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes.

Step 4

In a large mixing bowl, combine the cream of mushroom soup, milk, salt, and black pepper. Stir until smooth.

Step 5

Add the sautéed onions, drained tuna, frozen peas, and 1 1/2 cups of shredded cheddar cheese to the soup mixture. Mix well.

Step 6

Gently fold in the cooked egg noodles until evenly coated with the mixture.

Step 7

Transfer the noodle mixture to the prepared baking dish, spreading it out evenly.

Step 8

In a small bowl, combine the panko breadcrumbs, parmesan cheese, and olive oil. Mix until the breadcrumbs are coated in the oil.

Step 9

Sprinkle the remaining 1/2 cup of cheddar cheese on top of the casserole, followed by the breadcrumb mixture.

Step 10

Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.

Step 11

Remove from the oven and let it cool slightly for 5 minutes before serving. Enjoy!
