Ingredients

  • 16 oz Linguini pasta
  • 2 tbsp Olive oil
  • 4 units Garlic cloves, minced
  • 0.5 tsp Crushed red pepper flakes
  • 28 oz Canned whole tomatoes, crushed by hand
  • 0.5 cup Dry white wine
  • 2 lb Fresh littleneck clams, scrubbed clean
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguini according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

In a large, deep skillet or saucepan, heat the olive oil over medium heat.

Step 3

Add the minced garlic and crushed red pepper flakes to the pan. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 4

Pour in the crushed tomatoes and dry white wine. Stir to combine and bring the sauce to a gentle simmer.

Step 5

Add the cleaned clams to the sauce. Cover the pan with a lid and cook for about 6-8 minutes, or until the clam shells have opened. Discard any clams that remain closed.

Step 6

Season the sauce with salt and black pepper to taste. Stir gently to ensure the clams are evenly coated with the sauce.

Step 7

Add the cooked linguini to the pan, tossing to coat the pasta with the sauce. If the sauce is too thick, add a little reserved pasta water to loosen it.

Step 8

Sprinkle the chopped fresh parsley over the pasta and toss again to combine.

Step 9

Serve immediately, with grated Parmesan cheese on the side, if desired.
