Ingredients

  • 3 cups Rolled oats
  • 1 cup Raw almonds
  • 0.5 cup Raw pumpkin seeds (pepitas)
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Maple syrup
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Dried cranberries (optional)
  • 0.5 cup Dairy-free chocolate chips (optional)

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, almonds, pumpkin seeds, shredded coconut, cinnamon, and salt. Mix well.

Step 3

In a small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.

Step 4

Pour the wet ingredients over the dry ingredients and mix thoroughly to ensure everything is evenly coated.

Spread the granola mixture onto the prepared baking sheet in an even layer.
