Ingredients

  • 300 ml Strong black tea (brewed and cooled)
  • 300 g Mixed dried fruits (e.g., raisins, currants, sultanas, chopped apricots)
  • 150 g Light brown sugar
  • 250 g Self-raising flour
  • 1 Egg
  • 1 tsp Ground cinnamon (optional)

Directions

Step 1

Brew 300ml of strong black tea and allow it to cool completely.

In a large bowl, combine the mixed dried fruits and cooled tea. Cover the bowl with plastic wrap and let it soak overnight or for at least 6 hours, allowing the fruits to plump up and absorb the tea.

Preheat your oven to 160°C (320°F), or 140°C (284°F) for a fan oven. Line a 2lb loaf tin with parchment paper or grease it lightly.
