Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoons salt
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.25 teaspoons ground cloves
  • 1.75 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 can (15 ounces) pure pumpkin puree
  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9x13 inch baking pan, or line it with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.

Step 3

In a large mixing bowl, combine the granulated sugar and vegetable oil. Beat on medium speed until well combined.

Step 4

Add the eggs one at a time to the sugar and oil mixture, beating well after each addition.

Step 5

Mix in the pumpkin puree until the batter is smooth and evenly combined.

Step 6

Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.

Step 7

Pour the batter into the prepared baking pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the bars to cool completely in the pan.

Step 9

While the bars are cooling, prepare the cream cheese frosting. In a medium bowl, beat the cream cheese and unsalted butter on medium speed until smooth and creamy.

Step 10

Gradually add the powdered sugar, beating on low speed until fully incorporated. Then, add the vanilla extract and beat on medium speed until the frosting is fluffy.

Step 11

Once the pumpkin bars are completely cooled, spread the cream cheese frosting evenly over the top.

Step 12

Cut the bars into 24 pieces and serve. Store leftovers in an airtight container in the refrigerator for up to 5 days.
