Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) canned cream of mushroom soup
  • 1 can (14.5 oz) canned diced tomatoes with juice
  • 2 cups frozen mixed vegetables
  • 3 large russet potatoes, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 1 tablespoon vegetable oil or butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish with vegetable oil or butter.

Step 2

In a large skillet over medium-high heat, add the ground beef and cook until browned and fully cooked, breaking it apart as it cooks. Drain any excess grease.

Step 3

Add the diced onion and minced garlic to the skillet with the ground beef. Cook for 2-3 minutes until the onion softens and becomes translucent.

Step 4

Stir in the canned cream of mushroom soup, canned diced tomatoes (with juice), salt, black pepper, and paprika. Mix until well combined, then set aside.

Step 5

Spread the frozen mixed vegetables evenly across the bottom of the prepared casserole dish.

Step 6

Layer the thinly sliced russet potatoes on top of the vegetables, ensuring the slices overlap slightly to cover the dish evenly.

Step 7

Pour the beef and tomato mixture over the potato layer, using a spatula to spread it out evenly.

Step 8

Cover the casserole dish tightly with aluminum foil and bake in the preheated oven for 40 minutes.

Step 9

Remove the foil and sprinkle the shredded cheddar cheese evenly over the top of the casserole. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 10

Remove from the oven and let the casserole rest for 5 minutes before serving. Enjoy this comforting and hearty dish!
