Ingredients

  • 2 pieces Pie crusts (pre-made or homemade)
  • 1.5 cups Granulated sugar
  • 3 tablespoons All-purpose flour
  • 3 tablespoons Unsweetened cocoa powder
  • 0.25 teaspoons Salt
  • 3 cups Whole milk
  • 4 pieces Large egg yolks
  • 4 tablespoons Unsalted butter
  • 2 teaspoons Vanilla extract
  • 1 cup Heavy cream (optional, for whipped cream topping)
  • 2 tablespoons Powdered sugar (optional, for whipped cream topping)

Directions

Step 1

Preheat your oven to 375°F (190°C). If using a pre-made pie crust, place it in a pie dish and crimp the edges. Dock the crust by poking holes on the bottom with a fork to prevent bubbling. Pre-bake the crust for 10-12 minutes, then remove and let it cool completely.

Step 2

In a medium saucepan, whisk together the sugar, flour, cocoa powder, and salt until evenly combined.

Step 3

Gradually add the milk to the mixture while whisking to ensure no lumps form. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble (about 7-10 minutes).

Step 4

In a small bowl, whisk the egg yolks. Slowly temper the egg yolks by adding a few tablespoons of the hot chocolate mixture while whisking. Gradually add the tempered yolks back into the saucepan, stirring constantly.

Step 5

Continue cooking the mixture over medium-low heat for another 2-3 minutes, until thick and glossy.

Step 6

Remove the saucepan from the heat and immediately stir in the butter and vanilla extract until melted and fully incorporated.

Step 7

Pour the chocolate filling evenly into the pre-baked pie crusts, smoothing the tops with a spatula.

Step 8

Let the pies cool at room temperature for about 1 hour, then transfer them to the refrigerator to chill for at least 3 hours or until set.

Step 9

If desired, prepare whipped cream by beating the heavy cream and powdered sugar in a chilled bowl until stiff peaks form. Spread or pipe the whipped cream on top of the chilled pies before serving.

Step 10

Slice and serve these indulgent chocolate pies to your family or guests, and enjoy!
