Ingredients

  • 2 large Zucchini
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 medium Red onion
  • 1 pint Cherry tomatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Step 2

Wash and dry all the vegetables. Peel the carrots and slice them diagonally into 1/2-inch thick pieces.

Cut the zucchini into 1/2-inch thick rounds. If the zucchini is very large, halve the rounds to make half-moons.
