Ingredients

  • 6 large russet potatoes
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1.5 cups sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups shredded sharp cheddar cheese
  • 0.5 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with butter or nonstick spray.

Step 2

Peel the potatoes and cut them into 1-inch cubes. Place them in a large pot, cover with water, and bring to a boil. Cook for 10 minutes, or until fork-tender. Drain and set aside.

Step 3

In a large skillet over medium heat, melt the butter. Add the chopped onion and sauté for 4-5 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant. Remove from heat.

Step 4

In a large mixing bowl, combine the sour cream, cream of chicken soup, 1.5 cups of the shredded cheddar cheese, milk, sautéed onions and garlic, salt, black pepper, and paprika. Mix until well combined.

Step 5

Gently fold the cooked potatoes into the mixture, ensuring they are evenly coated. Transfer the mixture to the prepared casserole dish and spread it out evenly.

Step 6

In a small bowl, mix the panko breadcrumbs with olive oil until evenly coated. Sprinkle the breadcrumbs over the top of the casserole. Then, sprinkle the remaining 0.5 cup of shredded cheddar cheese on top.

Step 7

Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.

Step 8

Remove from the oven and let cool for 5-10 minutes before serving. Garnish with chopped parsley if desired.
