Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 28 oz canned diced tomatoes
  • 15 oz canned kidney beans, drained and rinsed
  • 15 oz canned black beans, drained and rinsed
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper (optional)
  • 1 cup shredded cheddar cheese (for topping)
  • 0.5 cup sour cream (for topping)
  • 0.25 cup chopped green onions (for topping)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add olive oil and cook the ground beef until browned. Break apart the meat with a wooden spoon as it cooks. Once browned, remove the beef from the pot and set aside, leaving about 1 tablespoon of drippings in the pot.

Step 2

In the same pot, sauté the diced onion and green bell pepper over medium heat for 5 minutes, or until softened. Then, add the minced garlic and cook for an additional minute, stirring frequently.

Step 3

Return the browned ground beef to the pot. Stir in the canned diced tomatoes (with their juices), drained kidney beans, black beans, and tomato paste.

Step 4

Pour in the beef broth, and stir to combine. Add the chili powder, ground cumin, smoked paprika, dried oregano, salt, black pepper, and cayenne pepper (if using). Mix well to distribute the spices evenly.

Step 5

Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for 30 minutes, stirring occasionally to prevent sticking.

Step 6

Taste and adjust seasonings if necessary. If the chili is too thick, add a splash of beef broth or water to reach your desired consistency.

Step 7

Serve the chili hot in bowls, and top with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped green onions. Enjoy with cornbread or tortilla chips for a complete meal!
