Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, quinoa flakes, buckwheat groats, chopped almonds, chopped walnuts, pumpkin seeds, sunflower seeds, chia seeds, ground cinnamon, ground ginger, and salt.
In a small microwave-safe bowl, melt the coconut oil in the microwave or in a small saucepan over low heat. Mix in the honey (or maple syrup) and vanilla extract until smooth.
