Ingredients

  • 2 cups elbow macaroni
  • 2 14.5 oz cans canned diced tomatoes (with juice)
  • 2 tablespoons unsalted butter
  • 1 medium, diced yellow onion
  • 2 cloves, minced garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar
  • 0.25 cup, grated Parmesan cheese (optional)
  • 2 tablespoons, chopped fresh basil (optional)
  • 8 cups water

Directions

Step 1

Bring 8 cups of water to a boil in a large pot. Add a generous pinch of salt and cook the elbow macaroni according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Step 2

While the macaroni is cooking, heat a large skillet over medium heat and add 2 tablespoons of unsalted butter.

Step 3

Add the diced yellow onion to the skillet and sauté for 4-5 minutes, or until the onion becomes translucent and soft.

Step 4

Stir in the minced garlic and cook for 1 more minute, stirring constantly to avoid burning.

Step 5

Pour in the canned diced tomatoes along with their juice. Stir to combine.

Step 6

Season the tomato mixture with 1 teaspoon of salt, 0.5 teaspoon of black pepper, and 1 teaspoon of sugar. Stir well and bring to a gentle simmer. Let the sauce cook for 10 minutes, stirring occasionally.

Step 7

Add the cooked and drained macaroni to the tomato mixture. Toss everything together until the pasta is evenly coated with the sauce.

Step 8

If desired, stir in 0.25 cup of grated Parmesan cheese and mix until melted. Sprinkle with freshly chopped basil for a bright, herby finish.

Step 9

Serve warm and enjoy the nostalgic, comforting flavors of My Dad's Ultimate Macaroni and Tomatoes.
