Ingredients

  • 1 lb beef sirloin or tenderloin
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp all-purpose flour
  • 3 tbsp unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz baby bella (cremini) mushrooms, sliced
  • 1 tbsp dijon mustard
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup sour cream
  • 2 tbsp fresh parsley, chopped (optional for garnish)
  • 12 oz egg noodles or rice, cooked (for serving)

Directions

Step 1

Trim any fat from the beef and slice it into thin strips, about 2 inches long and 1/4 inch thick. Season the beef with salt and black pepper.

Step 2

Dredge the beef strips lightly in the all-purpose flour, shaking off any excess.

Step 3

In a large skillet or sauté pan, heat 2 tablespoons of butter over medium-high heat. Add the beef in batches to avoid overcrowding and sear until browned on all sides, about 2-3 minutes per batch. Remove the beef from the pan and set aside.

Step 4

Reduce the heat to medium and melt the remaining tablespoon of butter in the same skillet. Add the chopped onion and cook for 3-4 minutes, or until softened and translucent.

Step 5

Stir in the minced garlic and cook for another 30 seconds, making sure it doesn’t burn.

Step 6

Add the sliced mushrooms to the pan and sauté for 5-7 minutes, or until the mushrooms are tender and any released liquid has evaporated.

Step 7

Stir in the Dijon mustard, beef broth, and Worcestershire sauce. Scrape the bottom of the pan to release any browned bits for added flavor.

Step 8

Return the beef to the pan and reduce the heat to low. Allow the mixture to simmer, uncovered, for 10 minutes, stirring occasionally.

Step 9

Stir in the sour cream and heat through. Do not allow the mixture to boil after adding the sour cream, as it may curdle.

Step 10

Taste and adjust the seasoning with more salt and pepper, if needed.

Step 11

Serve the Beef Stroganoff hot over cooked egg noodles or rice. Garnish with fresh chopped parsley, if desired.
