  • 1 cup cherry tomatoes, halved
  • 0.5 cup red bell pepper, diced
  • 2 tablespoons red onion, finely chopped
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 0.5 cup feta cheese, crumbled (optional)

Directions

Step 1

In a medium-sized bowl, add the couscous and pour the boiling water over it.

Step 2

Cover the bowl with a lid or plate and let it sit for 5 minutes to allow the couscous to absorb the water.

Step 3

Fluff the couscous with a fork to separate the grains, and let it cool to room temperature.

In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and black pepper to make the dressing.
