Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup All-purpose flour
  • 3 pieces Eggs
  • 2 tablespoons Water
  • 2 cups Breadcrumbs
  • 1 cup Parmesan cheese, grated
  • 4 tablespoons Olive oil
  • 2 cups Mozzarella cheese, shredded
  • 8 pieces Fresh basil leaves
  • 28 ounces Canned crushed tomatoes
  • 4 pieces Garlic cloves, minced
  • 1 piece Yellow onion, finely diced
  • 1 teaspoon Red pepper flakes (optional)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Sugar

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pound the chicken breasts until even in thickness, approximately 1/2 inch. Season both sides with salt and black pepper.

Step 3

Set up a breading station with three shallow bowls. In the first bowl, add the flour. In the second, whisk together the eggs and water. In the third, combine breadcrumbs and 1/2 cup parmesan cheese.

Step 4

Coat each chicken breast in flour, then dip into the egg mixture, and finally press into the breadcrumb mixture until fully coated. Shake off any excess.

Step 5

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Fry each chicken breast for 3-4 minutes per side until golden brown. Transfer to a paper towel-lined plate to drain and set aside.

Step 6

To prepare the sauce, heat the remaining 2 tablespoons of olive oil in a saucepan over medium heat. Sauté the onion until softened, about 5 minutes. Add the minced garlic and cook for another minute.

Step 7

Stir in the crushed tomatoes, red pepper flakes (if using), dried oregano, and sugar. Simmer the sauce for 15-20 minutes, stirring occasionally. Adjust seasoning with salt and pepper to taste.

Step 8

Spread 1 cup of the tomato sauce in the bottom of a baking dish. Arrange the fried chicken breasts on top and spoon additional sauce over each piece.

Step 9

Sprinkle the remaining parmesan cheese and the shredded mozzarella evenly over the chicken.

Step 10

Bake in the oven for 20 minutes, or until the cheese is melted and bubbling.

Step 11

Top with fresh basil leaves just before serving.

Step 12

Optional: Serve with spaghetti or your favorite pasta for a complete meal!
