Ingredients

  • 2 cups water
  • 2 teaspoons black tea leaves (or 2 tea bags)
  • 1 cup whole milk (or your preferred milk alternative)
  • 2 teaspoons sugar (adjust to taste)
  • 1 inch piece fresh ginger, grated or sliced
  • 4 pods cardamom pods, crushed
  • 3 whole cloves
  • 1 cinnamon stick
  • 6 peppercorns black peppercorns, crushed
  • 1 pinch optional ground nutmeg or star anise (for garnish)

Directions

Step 1

In a medium saucepan, combine the water, ginger, cardamom pods, cloves, cinnamon stick, and crushed peppercorns. Bring the mixture to a boil over medium heat.

Step 2

Reduce the heat to low and allow the spices to simmer for 4-5 minutes, releasing their flavors into the water.

Step 3

Add the black tea leaves (or tea bags) to the saucepan and let it steep for 2 minutes.

Step 4

Stir in the milk and sugar, adjusting the sweetness to taste. Increase the heat to medium and bring the mixture to a gentle boil while stirring to prevent the milk from scorching.

Step 5

Once the chai comes to a gentle boil, reduce the heat and let it simmer for 1-2 minutes to fully combine the flavors.

Step 6

Strain the chai through a fine-mesh sieve or tea strainer into mugs to remove the spices and tea leaves.

Step 7

Garnish with a pinch of ground nutmeg or a small piece of star anise, if desired, and serve hot.
