Ingredients

  • 2 cups Rolled oats
  • 0.5 cups Almonds, roughly chopped
  • 0.25 cups Sunflower seeds
  • 0.5 cups Dried cranberries
  • 0.25 cups Dark chocolate chips
  • 0.5 cups Honey
  • 0.25 cups Peanut butter (or almond butter)
  • 2 tablespoons Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Salt

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

Step 2

In a large mixing bowl, combine the rolled oats, chopped almonds, sunflower seeds, dried cranberries, and dark chocolate chips. Toss together until evenly distributed.

Step 3

In a small saucepan over low heat, combine honey, peanut butter, and coconut oil. Stir constantly until the mixture is smooth and well combined. Remove from heat and stir in vanilla extract and salt.

Step 4

Pour the warm wet mixture over the dry ingredients in the bowl. Use a spatula or wooden spoon to mix everything together until evenly coated.

Step 5

Transfer the mixture to the prepared baking pan. Use the back of the spoon or a flat measuring cup to press it down firmly and evenly into the pan.

Step 6

Bake in the preheated oven for 20 minutes, or until the edges are slightly golden.

Step 7

Remove the pan from the oven and let it cool completely on a wire rack. This step is crucial, as the bars will hold together better if fully cooled.

Step 8

Once cooled, use the parchment overhang to lift the granola out of the pan. Place on a cutting board and cut into 12 even bars using a sharp knife.

Step 9

Store the granola bars in an airtight container at room temperature for up to 5 days, or in the fridge for up to 2 weeks.
