Ingredients

  • 450 grams dried navy beans
  • 200 grams bacon
  • 1 large yellow onion
  • 3 whole garlic cloves
  • 120 milliliters ketchup
  • 80 milliliters molasses
  • 60 grams dark brown sugar
  • 30 milliliters apple cider vinegar
  • 15 grams Dijon mustard
  • 10 grams smoked paprika
  • 2 grams cayenne pepper
  • 10 grams salt
  • 5 grams black pepper
  • 1.5 liters water
  • 15 milliliters olive oil

Directions

Step 1

Rinse the dried navy beans in cold water, removing any debris. Soak the beans in a large bowl with water overnight or for at least 8 hours.

Step 2

Drain and rinse the soaked beans. Set aside.

Step 3

Preheat your oven to 160°C (320°F).

Step 4

In a large oven-safe pot or Dutch oven, heat the olive oil over medium heat. Add the bacon, cut into small pieces, and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

Step 5

Finely chop the onion and mince the garlic. Add them to the pot and sauté for 5-7 minutes until softened and fragrant.

Step 6

Stir in the ketchup, molasses, brown sugar, apple cider vinegar, Dijon mustard, smoked paprika, cayenne pepper, salt, and black pepper. Cook for 2-3 minutes to combine and develop the flavors.

Step 7

Add the soaked and drained beans to the pot, followed by the water. Stir everything together and bring to a boil.

Step 8

Cover the pot with a lid and transfer it to the preheated oven. Bake for 4 hours, stirring every hour to prevent sticking, until the beans are tender and the sauce is thickened.

Step 9

Taste and adjust the seasoning if needed. Let the beans sit for 10 minutes before serving to allow the flavors to meld.

Step 10

Serve warm as a side dish or enjoy on their own with a slice of thick bread.
