Ingredients

  • 2.25 teaspoons Active dry yeast
  • 0.25 cups Warm water (about 110°F/45°C)
  • 0.33 cups Granulated sugar
  • 1 cups Whole milk
  • 4 tablespoons Unsalted butter
  • 1 teaspoon Salt
  • 4 cups All-purpose flour
  • 1 Egg, lightly beaten
  • 2 tablespoons Melted butter (for brushing, optional)

Directions

Step 1

In a small bowl, dissolve the yeast in warm water with a pinch of sugar. Let it sit for 5-10 minutes until it becomes frothy.

Step 2

In a medium saucepan, combine milk, butter, sugar, and salt. Heat over low-medium heat until the butter melts and the mixture is warm but not hot (about 110°F/45°C). Allow to cool slightly if it overheats.

Step 3

In a large mixing bowl, combine the yeast mixture, milk mixture, and beaten egg. Gradually add the flour, one cup at a time, stirring with a wooden spoon or a dough hook attachment on a stand mixer. Keep mixing until a soft, slightly sticky dough forms.

Step 4

Turn the dough out onto a lightly floured surface and knead for about 6-8 minutes, or until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5 minutes on medium speed.

Step 5

Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.

Step 6

Punch down the risen dough to release air. Divide the dough into 12 equal portions. Shape each portion into a ball and place them in a greased 9x13-inch baking dish or a large round pan.

Step 7

Cover the rolls with a clean kitchen towel and let them rise again until nearly doubled, about 30-45 minutes.

Step 8

Preheat your oven to 375°F (190°C). Bake the rolls for 18-20 minutes, or until they are golden brown on top.

Step 9

Optional: Brush the tops of the warm rolls with melted butter for extra flavor and shine.

Step 10

Serve warm and enjoy Aunt Ruby's hot rolls, slathered with butter or honey!
