Ingredients

  • 1 pound Ground beef
  • 12 ounces Fresh green beans
  • 15 ounces Canned diced tomatoes
  • 15 ounces Canned black beans
  • 1 medium Yellow onion
  • 3 cloves Garlic cloves
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 2 tablespoons Olive oil
  • 2 cups Beef broth
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Shredded cheddar cheese (optional for garnish)
  • 0.25 cup Sour cream (optional for garnish)
  • 2 tablespoons Chopped cilantro (optional for garnish)

Directions

Step 1

Wash and trim the ends of the green beans, then cut them into 1-inch pieces. Set aside.

Step 2

Dice the yellow onion and mince the garlic cloves.

Step 3

Heat a large pot or Dutch oven over medium heat. Add the olive oil.

Step 4

Once the oil is hot, add the diced onion and sauté for 3–4 minutes until softened.

Step 5

Add the minced garlic and cook for another 1 minute until fragrant.

Step 6

Add the ground beef to the pot. Cook until browned, breaking it apart with a spatula, about 5–7 minutes. Drain excess fat if necessary.

Step 7

Stir in the chili powder, ground cumin, and smoked paprika. Mix well to coat the beef evenly with spices.

Step 8

Pour in the canned diced tomatoes (along with their juices), canned black beans (drained and rinsed), and beef broth. Stir to combine.

Step 9

Bring the mixture to a gentle simmer and cook for 10 minutes, uncovered.

Step 10

Add the green beans to the pot. Stir them in and simmer for another 10–12 minutes or until the green beans are tender but still slightly crisp.

Step 11

Season with salt and black pepper to taste.

Step 12

Serve the chili warm in bowls. Garnish with shredded cheddar cheese, sour cream, and chopped cilantro if desired.
