Ingredients

  • 2 pounds Russet potatoes
  • 1 tablespoon Salt
  • 4 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 2 tablespoons Whole grain mustard
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Chopped fresh chives (optional, for garnish)

Directions

Step 1

Peel and cut the russet potatoes into evenly sized chunks, about 2 inches each, to ensure even cooking.

Step 2

Place the potatoes in a large pot, cover them with cold water, and add 1 tablespoon of salt to the water.

Step 3

Bring the water to a boil over medium-high heat, then reduce the heat and simmer the potatoes for about 15-20 minutes or until they are fork-tender.

Step 4

Drain the potatoes and return them to the pot over low heat. Stir gently for 1-2 minutes to allow excess moisture to evaporate.

Step 5

In a small saucepan, warm the heavy cream and butter together over low heat until the butter is melted. Do not let it boil.

Step 6

Mash the potatoes using a potato masher or a ricer until smooth. Gradually add the warm cream and butter mixture, mashing and stirring until fully incorporated and creamy.

Step 7

Stir in the whole grain mustard and Dijon mustard until well combined. Taste and adjust seasoning with additional salt and black pepper, if needed.

Step 8

Transfer the mashed potatoes to a serving dish, garnish with chopped fresh chives if desired, and serve immediately.
