Ingredients

  • 4 links Italian sausages (mild or spicy)
  • 2 large Yellow onions
  • 2 medium Bell peppers (red or yellow)
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 cup Whole-grain mustard
  • 4 pieces Crusty sandwich rolls
  • 2 tablespoons Butter
  • 2 tablespoons Fresh parsley (chopped, optional)

Directions

Step 1

Preheat your grill to medium heat, about 375°F (190°C).

Step 2

Slice the onions and bell peppers into thin strips.

Step 3

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and bell peppers, and season with salt and black pepper. Cook, stirring occasionally, for 10-12 minutes or until softened and caramelized. Remove from heat and set aside.
