Ingredients

  • 2 pieces (1 to 1.5 lb each) Pork tenderloin
  • 3 tablespoons Dijon mustard
  • 2 tablespoons Whole grain mustard
  • 4 Garlic cloves (minced)
  • 3 tablespoons Olive oil
  • 1 tablespoon Honey
  • 1 tablespoon Fresh rosemary (chopped)
  • 1 tablespoon Fresh thyme (chopped)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Trim any silver skin or excess fat from the pork tenderloins and pat them dry with paper towels.

Step 3

In a small bowl, whisk together the Dijon mustard, whole grain mustard, minced garlic, olive oil, honey, rosemary, thyme, salt, and black pepper until well combined.

Step 4

Rub the mustard-garlic marinade evenly over the pork tenderloins, ensuring all sides are coated.

Step 5

Heat a large oven-safe skillet over medium-high heat. Sear the pork tenderloins for 2-3 minutes on each side until golden brown.

Step 6

Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes, or until the internal temperature reaches 145°F (63°C) for a slightly pink, juicy center.

Step 7

Remove the pork tenderloins from the oven and let them rest for 5-10 minutes before slicing to allow the juices to redistribute.

Step 8

Slice the pork into 1-inch medallions and serve warm, optionally garnished with additional fresh rosemary or thyme.
