Ingredients

  • 1.5 pounds Boneless, skinless chicken breasts
  • 1 whole Red bell pepper
  • 1 whole Yellow bell pepper
  • 1 whole Green bell pepper
  • 3 tablespoons Olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Honey
  • 3 cloves Garlic
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 8 pieces Wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

Step 2

Cut the chicken breasts into 1-inch cubes and set aside.

Step 3

Slice the red, yellow, and green bell peppers into 1-inch pieces, removing seeds and stems.

Step 4

In a large bowl, whisk together olive oil, Dijon mustard, honey, minced garlic, dried oregano, salt, black pepper, and lemon juice to create the marinade.

Step 5

Add the chicken cubes to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes or up to 2 hours to allow the flavors to penetrate.

Step 6

Preheat your grill to medium-high heat.

Step 7

While the grill is heating, thread the marinated chicken pieces and bell pepper slices alternately onto the skewers, leaving a little space between each piece for even cooking.

Step 8

Place the kabobs on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and has reached an internal temperature of 165°F (74°C).

Step 9

Remove the kabobs from the grill and let them rest for 2-3 minutes before serving.

Step 10

Serve hot with a side salad, rice, or your favorite grilled vegetables.
