Ingredients

  • 2 pounds fresh mussels
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 medium, finely chopped shallots
  • 3 minced garlic cloves
  • 1 cup dry white wine
  • 0.25 cup heavy cream
  • 2 tablespoons, finely chopped fresh parsley
  • 1 teaspoon fresh thyme
  • 1 piece bay leaf
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 loaf, for serving baguette

Directions

Step 1

Scrub and rinse the mussels under cold running water. Discard any mussels that are open and do not close when tapped.

Step 2

Melt the butter with the olive oil in a large pot over medium heat.

Step 3

Add the finely chopped shallots and garlic to the pot and sauté for 2-3 minutes until softened and fragrant.

Step 4

Pour in the white wine and bring to a gentle simmer. Add the heavy cream, chopped parsley, thyme, bay leaf, salt, and pepper, stirring to combine.

Step 5

Increase the heat to high and add the mussels to the pot. Cover with a lid and cook for 5-7 minutes, shaking the pot occasionally, until the mussels have opened. Discard any mussels that remain closed after cooking.

Step 6

Remove the pot from heat. Taste the broth and adjust seasoning if necessary.

Step 7

Divide the mussels and the broth among serving bowls. Garnish with additional parsley, if desired.

Step 8

Serve with a warm baguette for dipping into the flavorful broth.
