  • 3 tablespoons Fresh parsley, chopped
  • 1 teaspoon Fresh thyme leaves
  • 1 whole Bay leaf
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 loaf Crusty bread (for serving)

Directions

Step 1

Rinse the mussels thoroughly under cold running water and remove any visible debris or beards. Discard any mussels that are cracked or don’t close when tapped.

Step 2

Heat the olive oil in a large, deep skillet or Dutch oven over medium heat.

Add the minced garlic and shallots to the pan and sauté until fragrant and translucent, about 2-3 minutes.

Stir in the halved cherry tomatoes and cook for 4-5 minutes until they start to soften and release their juices.
