  • 2 pounds Fresh mussels
  • 4 tablespoons Unsalted butter
  • 2 small Shallots, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Breadcrumbs
  • 2 tablespoons Parsley, finely chopped
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon Lemon zest
  • 1 cup Dry white wine
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Thoroughly clean and scrub the mussels under cold water. Discard any mussels that are cracked or do not close when tapped.

Step 3

In a large pot, melt 2 tablespoons of butter over medium heat. Add the shallots and garlic, cooking until fragrant and softened, about 2 minutes.

Add the mussels to the pot along with the white wine. Cover and cook for 5-7 minutes, shaking the pot occasionally, until all the mussels have opened. Discard any that remain closed.

Remove the mussels from the pot, allowing them to cool slightly. Strain and reserve the cooking liquid. Discard the empty top shells, leaving the mussels nestled in their bottom shells. Arrange them in a single layer in a large baking dish.

In a small skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the breadcrumbs and stir until golden and toasted, about 3 minutes. Remove from heat.

In a bowl, combine the toasted breadcrumbs, parsley, Parmesan cheese, lemon zest, salt, and pepper. Mix well.

Add 2 tablespoons of the reserved mussel cooking liquid and the olive oil to the breadcrumb mixture, stirring to create a moist but crumbly topping.

Spoon a small amount of the breadcrumb mixture onto each mussel, pressing gently to adhere.

Place the baking dish in the preheated oven and bake for 8-10 minutes, or until the topping is golden and crispy.
