Ingredients

  • 500 grams Button mushrooms
  • 3 tablespoons Olive oil
  • 3 units Garlic cloves, minced
  • 1 unit Small onion, finely chopped
  • 250 grams Cherry tomatoes, halved
  • 1.5 teaspoons Smoked paprika
  • 0.5 teaspoons Cayenne pepper
  • 0.5 teaspoons Ground cumin
  • 0.5 teaspoons Red chili flakes
  • 1 teaspoons Salt
  • 0.5 teaspoons Pepper
  • 100 milliliters Dry white wine
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Clean the mushrooms by wiping them gently with a damp paper towel. Trim the stems if necessary.

Step 2

Heat a large skillet over medium heat and add olive oil.

Step 3

Once the oil is hot, add the minced garlic and chopped onion. Sauté for 2-3 minutes until the onion becomes translucent and fragrant.

Step 4

Add the halved cherry tomatoes to the skillet and cook for 4-5 minutes, stirring occasionally, until the tomatoes begin to break down.

Step 5

Stir in the smoked paprika, cayenne pepper, ground cumin, red chili flakes, salt, and pepper. Mix well to coat the tomato mixture in the spices.

Step 6

Add the mushrooms to the skillet and toss to coat them with the sauce.

Step 7

Pour in the white wine and bring the mixture to a simmer. Let it cook for 10-12 minutes, stirring occasionally, until the mushrooms are tender and the sauce has thickened.

Step 8

Remove the skillet from the heat and sprinkle the dish with freshly chopped parsley.

Step 9

Serve the mushrooms hot as a tapas-style appetizer or alongside crusty bread to soak up the spicy sauce.
