Ingredients

  • 12 pieces Large white or cremini mushrooms
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 3 cups Fresh spinach
  • 2 cloves Garlic
  • 4 ounces Cream cheese
  • 0.5 cups Grated Parmesan cheese
  • 0.25 cups Italian-style breadcrumbs
  • 0.5 cups Shredded mozzarella cheese
  • 1 tablespoon Butter

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean the mushrooms with a damp paper towel and remove the stems. Finely chop the stems and set them aside.

Step 3

Arrange the mushroom caps hollow side up on a greased baking sheet. Lightly brush them with 1 tablespoon of olive oil and sprinkle with a pinch of salt and black pepper.

Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped mushroom stems and sauté for 2-3 minutes until softened.
