Ingredients

  • 12 pieces Button mushrooms
  • 100 grams Feta cheese, crumbled
  • 2 cloves Garlic, minced
  • 2 tablespoons Parsley, finely chopped
  • 2 tablespoons Olive oil
  • 2 tablespoons Breadcrumbs
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Salt
  • 1 teaspoon Lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Clean the mushrooms with a damp paper towel to remove any dirt. Carefully remove the stems and set the caps aside. Finely chop the stems and set them aside for the stuffing mixture.

Step 3

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and chopped mushroom stems, and sauté for 2-3 minutes until softened. Remove from heat and let it cool slightly.

Step 4

In a mixing bowl, combine the crumbled feta cheese, sautéed mushroom stems and garlic, parsley, breadcrumbs, black pepper, salt, and lemon juice. Mix well until evenly combined.

Using a small spoon, carefully fill each mushroom cap with the stuffing mixture, pressing gently to ensure it is packed in.

Brush the tops of the stuffed mushrooms lightly with the remaining 1 tablespoon of olive oil.
