Ingredients

  • 400 grams Cremini mushrooms
  • 2 tablespoons Olive oil
  • 1 Yellow onion
  • 3 Garlic cloves
  • 1 cup Oats
  • 1 cup Cooked black beans
  • 1 cup Breadcrumbs
  • 2 tablespoons Soy sauce
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 Egg (or flax egg for vegan version)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Clean and finely chop the cremini mushrooms.

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Add the chopped onion to the skillet and cook for 4-5 minutes until soft and translucent.

Step 4

Stir in the garlic and cook for another 1-2 minutes, until fragrant.

Add the chopped mushrooms to the skillet and cook for 8-10 minutes, stirring occasionally, until the mushrooms release their liquid and it evaporates completely. Set aside to cool slightly.
