Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 200 grams button mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper (freshly ground)
  • 3 tablespoons heavy cream
  • 2 tablespoons parmesan cheese (finely grated)
  • 4 slices sourdough bread slices
  • 1 tablespoon parsley (chopped, for garnish)

Directions

Step 1

Heat a large skillet over medium-high heat and add the olive oil and butter.

Step 2

Once the butter has melted, add the sliced mushrooms. Cook for 6-8 minutes, stirring occasionally, until the mushrooms are golden brown and have cooked down.

Step 3

Add the minced garlic and thyme leaves to the skillet. Stir for 1 minute until fragrant.

Step 4

Season the mushrooms with salt and freshly ground black pepper. Mix well to evenly distribute the seasoning.

Step 5

Reduce the heat to low and stir in the heavy cream and parmesan cheese. Cook for another 2-3 minutes until the sauce is slightly thickened and creamy.

Step 6

While the mushroom mixture is cooking, toast the sourdough bread slices in a toaster, pan, or under a broiler until golden brown.

Step 7

Spoon the creamy mushroom mixture generously over each slice of toasted bread.

Step 8

Garnish with chopped parsley and serve immediately. Enjoy!
