Ingredients

  • 8 oz Angel hair pasta
  • 2 tbsp Olive oil
  • 4 tbsp Unsalted butter
  • 12 oz Baby Bella mushrooms
  • 4 Garlic cloves
  • 0.5 cup Dry white wine
  • 0.25 cup Vegetable broth
  • 2 tbsp Lemon juice
  • 0.25 tsp Crushed red pepper flakes
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped
  • 0.25 cup Grated parmesan cheese (optional)

Directions

Step 1

Cook the angel hair pasta according to the package instructions. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, clean and slice the Baby Bella mushrooms into 1/4-inch thick slices. Mince the garlic cloves.

Step 3

Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat until the butter melts and starts to foam.

Step 4

Add the sliced mushrooms to the skillet and cook for 6-8 minutes, stirring occasionally, until they are golden brown and tender.

Step 5

Stir in the minced garlic and cook for 1 minute, stirring constantly to prevent burning.

Step 6

Deglaze the skillet by adding the white wine. Allow it to simmer for 2-3 minutes until reduced by half.

Add the vegetable broth, lemon juice, crushed red pepper flakes, salt, and black pepper. Stir to combine and simmer for another 2 minutes.

Remove the skillet from the heat and stir in the chopped fresh parsley. Adjust seasoning with additional salt and pepper if needed.
