Ingredients

  • 3 pounds Chuck roast
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 3 Garlic cloves
  • 8 ounces Cremini mushrooms
  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Tomato paste
  • 1 teaspoon Dried thyme
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Season the chuck roast generously with salt and black pepper on both sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add the chuck roast and sear it on both sides, about 3-4 minutes per side, until browned. Transfer the roast to the crock pot.

Step 3

Peel and slice the yellow onion into thin wedges. Peel and mince the garlic cloves. Slice the cremini mushrooms into thin pieces.

Step 4

In the same skillet used to sear the roast, add the onions and garlic. Sauté for 2-3 minutes until softened and fragrant. Stir in the mushrooms and continue cooking for another 3 minutes.

Deglaze the skillet by pouring in 1/2 cup of the beef broth, scraping up any browned bits from the bottom of the pan. Remove the skillet from heat.

Add the cooked onions, garlic, and mushrooms to the crock pot. Pour in the remaining beef broth, Worcestershire sauce, and tomato paste. Sprinkle dried thyme over the mixture.

Cover the crock pot and cook on LOW for 8 hours, or until the roast is fork-tender.

When the cooking time is complete, transfer the roast to a serving platter and keep it warm.

To thicken the mushroom sauce, whisk together cornstarch and water in a small bowl. Stir the mixture into the liquid in the crock pot. Cover and cook on HIGH for an additional 15 minutes, or until the sauce has thickened.
