Ingredients

  • 2 sheets Puff pastry sheets
  • 250 grams Button mushrooms
  • 1 medium Yellow onion
  • 1 teaspoon Fresh thyme
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 2 cloves Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 50 grams Grated Parmesan cheese
  • 1 large Egg
  • 1 tablespoon Milk

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

Remove the puff pastry sheets from the freezer and allow them to thaw slightly on a clean surface.

Step 3

Finely dice the mushrooms and onion. Mince the garlic.

Step 4

Heat a large skillet over medium heat. Add olive oil and butter, then sauté the onion until soft and golden, about 5-7 minutes.

Step 5

Add the mushrooms, garlic, fresh thyme, salt, and pepper to the skillet, and cook until the mushrooms release their moisture and most of it evaporates, around 5-6 minutes.

Step 6

Remove the mushroom-onion mixture from the heat and let it cool slightly. Stir in the grated Parmesan cheese.

Step 7

Cut the puff pastry sheets into 12 equal squares. Place each square on the lined baking tray, leaving a little space between each piece.

Step 8

Using a small knife, lightly score a border about 1-2 cm from the edge of each puff pastry square, being careful not to cut all the way through.

Divide the mushroom-onion mixture evenly among the pastry squares, spreading it within the scored borders.

Step 10

In a small bowl, whisk together the egg and milk to create an egg wash. Brush the edges of the pastry with the egg wash to ensure a golden, crisp finish.

Bake the tartlets in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.

Remove from the oven and let the tartlets cool for a few minutes before serving. Enjoy warm or at room temperature!
