  • 1 tablespoon butter
  • 1 medium (sliced) yellow onion
  • 1.5 cups (sliced) mushrooms
  • 2 cups baby spinach
  • 2 cloves (minced) garlic
  • 1 teaspoon balsamic vinegar

  • 0.25 teaspoon black pepper
  • 4 slices whole-grain bread
  • 2 tablespoons mayonnaise
  • 2 slices provolone cheese

Directions

Step 1

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Add the sliced yellow onion to the skillet and cook for 8-10 minutes, stirring occasionally, until the onions are soft and caramelized.

Step 3

Add the sliced mushrooms to the skillet and cook for another 5-7 minutes until they release their moisture and start to brown.
