Ingredients

  • 1 whole Baguette
  • 3 tablespoons Olive oil
  • 3 medium Garlic cloves
  • 2 cups Cremini mushrooms
  • 1 cup Black olives
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoon Red chili flakes
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Parmesan cheese
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat oven to 375°F (190°C).

Step 2

Slice the baguette into 1/2-inch thick slices and arrange them on a baking sheet.

Step 3

Brush each slice with 1 tablespoon of olive oil (reserve the remaining olive oil for the topping).

Step 4

Toast the baguette slices in the oven for 8-10 minutes, or until golden and crisp. Remove and set aside.

Step 5

Mince the garlic cloves and set aside half for later use. Use the other half to gently rub onto the toasted bread slices for additional flavor.

Step 6

Clean and finely chop the cremini mushrooms.

Step 7

Heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat.

Step 8

Add the minced garlic to the skillet and sauté for 30 seconds or until fragrant.

Step 9

Add the chopped mushrooms to the skillet and cook for 6-8 minutes, stirring occasionally, until they release their moisture and become golden brown.

Step 10

Roughly chop the black olives and add them to the skillet along with fresh thyme leaves, red chili flakes, salt, and black pepper. Cook for another 2-3 minutes to combine the flavors.

Step 11

Remove the skillet from heat and transfer the mushroom olive mixture to a bowl.

Step 12

Grate Parmesan cheese and finely chop the parsley. Add both to the mushroom olive mixture and gently toss to combine.

Step 13

Spoon the mixture onto the toasted bread slices, dividing it evenly among them.

Step 14

Garnish with additional parsley or Parmesan cheese, if desired, and serve immediately.
