Ingredients

  • 250 grams Button mushrooms
  • 1 cup Green peas (fresh or frozen)
  • 2 tablespoons Oil (vegetable or sunflower)
  • 1 teaspoon Cumin seeds
  • 1 medium Onion (finely chopped)
  • 4 cloves Garlic (minced)
  • 1 teaspoon Ginger (minced)
  • 2 medium Tomatoes (pureed)
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Garam masala
  • 0.5 teaspoon Kasuri methi (dried fenugreek leaves)
  • 1 teaspoon Salt
  • 1 cup Water
  • 2 tablespoons Fresh cilantro (chopped)

Directions

Step 1

Clean and slice the button mushrooms. If using frozen green peas, soak them in warm water for 5 minutes and drain.

Step 2

Heat 2 tablespoons of oil in a pan over medium heat. Add 1 teaspoon of cumin seeds and let them splutter.

Step 3

Add the finely chopped onion and sauté until golden brown, about 4-5 minutes.

Step 4

Stir in the minced garlic and ginger and cook for 1 minute or until fragrant.

Step 5

Add the pureed tomatoes, turmeric powder, coriander powder, and red chili powder. Cook for 6-7 minutes, stirring occasionally, until the oil separates from the mixture.

Step 6

Stir in the sliced mushrooms and green peas. Cook for 3-4 minutes to lightly sauté the vegetables.

Step 7

Pour in 1 cup of water and add salt to taste. Mix well and bring the mixture to a simmer. Cover the pan and let it cook for 10 minutes or until the mushrooms and peas are tender.

Step 8

Uncover the pan, sprinkle the garam masala and kasuri methi over the curry, and mix well.

Step 9

Garnish with freshly chopped cilantro and serve hot with rice, naan, or roti.
