Ingredients

  • 12 oz Fettuccine pasta
  • 4 tbsp Unsalted butter
  • 2 tbsp Olive oil
  • 3 cloves Garlic cloves, minced
  • 8 oz Button mushrooms, sliced
  • 1.5 cups Heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper, freshly ground
  • 2 tbsp Fresh parsley, chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

Step 2

In a large skillet, melt the butter and olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the sliced mushrooms to the skillet and cook for 6-8 minutes, stirring occasionally, until the mushrooms are golden brown and tender.

Step 4

Reduce the heat to medium-low and pour in the heavy cream. Stir gently and let the cream warm through, about 2-3 minutes.

Step 5

Gradually add the Parmesan cheese, stirring continuously until the cheese has melted and the sauce is smooth.

Step 6

Season the sauce with salt and freshly ground black pepper. If the sauce is too thick, stir in small amounts of the reserved pasta water until it reaches your desired consistency.

Step 7

Add the cooked fettuccine to the skillet and toss to combine, ensuring the pasta is evenly coated with the creamy Alfredo sauce.

Step 8

Remove the skillet from heat and garnish with freshly chopped parsley.

Step 9

Serve immediately and enjoy your Mushroom Fettuccine Alfredo with an optional side of garlic bread or a simple salad.
