Ingredients

  • 300 grams Cremini mushrooms
  • 2 medium Shallots
  • 2 cloves Garlic
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 teaspoon Fresh thyme
  • 2 tablespoons Dry white wine
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 200 grams Chicken liver pate
  • 1 large Fresh baguette
  • 1 tablespoon Fresh parsley

Directions

Step 1

Clean the mushrooms using a damp paper towel to remove any dirt. Finely chop the mushrooms, shallots, and garlic.

Step 2

Heat a large nonstick skillet over medium heat. Add the butter and olive oil, allowing them to melt together.

Step 3

Add the shallots and garlic to the skillet and sauté for 2 minutes or until softened and fragrant.

Step 4

Add the chopped mushrooms to the skillet. Cook for 8-10 minutes, stirring occasionally, until the mushrooms release their liquid and the mixture becomes almost dry.

Step 5

Stir in the fresh thyme, dry white wine, salt, and black pepper. Cook for an additional 2 minutes, allowing the wine to evaporate. Remove from heat and let the duxelles cool slightly.

Step 6

Slice the baguette into thin discs. Optionally, toast them in a preheated 375°F (190°C) oven for 5-7 minutes until lightly golden.

Step 7

Assemble the platter: Place the mushroom duxelles in a small bowl and set it on the platter. Add the chicken liver pate on the side, garnished with fresh parsley. Arrange the baguette slices around the duxelles and pate.

Step 8

Serve immediately, allowing guests to spread the duxelles and pate onto the baguette slices.
